The gents in Dornoch Castle have one of the most impressive operations going anywhere in the world. In the beautiful refurbished castle they operate an incredible bed and breakfast. Downstairs they have one of the world's best bars with an exceptional single cask selection. Out back is the "distillery" - basically a shipping container and an old stone shed that produces one of the best gins on the planet and a boatload of fascinating whisky. On top of all of this - the Thompson brothers also function as one of the most boutique independent bottlers in Scotland. The synergy of their operation is incredible. Every single aspect works to make the others even better. In particular, their impressive bar: ranked as No. 1 Whisky hotel, Whisky bar of the year in 2014, and 2016, Pub of the Year many years in a row, and a zillion other accolades, works to attract an impressive array of single barrel opportunties. While it's easy to focus on whisky in Scotland, this 11 year old Moneymusk cask caught our attention in a big way and we just had to have it. Pot distilled Jamaican Rum, especially at high proof and unadulterated, offers some of the very best drinking to be found. A complex and heady aroma of tropical fruit basket and sesame combined with cream and baking spices tied together with a little sea salt make for a perfect classic daiquiri. It's a very approachable pot still rum but doesn't lack for the intensity sought out by the most serious Tiki-heads.

This is one serious bottle of Rum. I can't tell you how long it spent aging in the tropics but I can certainly tell you that it spent some time in Scotland, and it shows! The nose is powerful and full with just a hint of the Jamaican funk we love so much but the palate, the palate really has something to say! Almost more like a single malt, this Rum makes me think less of rum funk and more of the Islay brine. Rum drinkers delight, you have another bottle that is a must for your collection and to all our Scotch drinkers out there, this will be a rum to turn your head!

This is definitely a rum to ponder over while it sits in the glass. While the proof isn’t exceptionally high, the fumes take a few minutes to blow over but I noticed that as I waited, the aromas evolved as well. This rum started with strong notes of burnt rubber and that was about it, however, as it settled in the glass things began to change. Spice notes of clove and pepper came out, overripe pineapple (almost to the point of fermentation), caramel apple and a savory, salty note that reminded me of salami. Sweet and funky notes played on the palate, largely translating the burnt rubber note from the nose and combining it with caramel apple and plantains. The clove starts to show up again as the finish transitions into straight up bananas foster, which lingered until I felt like I needed to actually make bananas foster for desert tonight. If you like your Jamaican rums, you’re going to love this one.

This is a fantastic rum and shows how really good rum can be. The nose has the savory earthy funk that fans of Jamaican rums love. In the mouth this rum is very complex, with layered spice and savory notes that are delicious and intriguing.It is on the dry side with a touch of fruitiness. With a splash of water it has the same flavor profit but has a creamy moth feel. There is a long finish.

The wild high ester pot distilled spirit from Clarendon Distillery is not something we get access to very often. This is one of the many different rums coming out of this distillery and is presumed to be somewhere between 200-300 ppm of esters putting it right up there with many of the heady Hampden's that have been so well loved. Whatever the total ester content, there's absolutely nothing like high-ester aged Jamaican rum and while Monymusk doesn't have the same commercial weight yet as Hampden has, the rum itself is second to none. The nose is an earth-shattering mixture of overripe banana, mandarin orange, guava, toasted cloves and fresh lime juice. A bold linear character on the palate with dense green olives, sweet exotic spices, wild tropical fruit, a long citrus note on the finish which builds toward a warm herbal finish. We won't be getting any other old Jamaican this year, but anyone who loves a good powerfully flavored rum is going to enjoy this masterpiece.

It is an increasingly rare treat these days to find properly aged pot still Jamaican rum, and this provides the perfect example of what that age can do. Like a fruit salad someone lit on fire, the aromas are intense, varied, and wild. It triggers an impulse in some primitive part of my brain that is at once terrified and enchanted. Waxy funk carries cherries jubilee, cinnamon stick, eucalyptus, and Thai basil across the palate, unabashed and unrepentant. It assaults all the senses and takes them prisoner, and I find myself succumbing to Stockholm Syndrome. A healthy dose of water reveals delicate citrus, banana and pineapple, as well as subtler sage and teak flavors, showing that this beast does have a tender side. No matter how you drink it, this a fantastic rum, and it won't last long.

The perfect introduction to Jamaican pot distillate. This rum is intense yet approachable. You'd never guess it's bottled at 56% ABV even when sipping it neat. The nose is complex, yet wholly enjoyable, even for a novice rum drinker. No robust fusel notes here, just a gentle umami underpinning insane fruit and spice. Mix it with just a bit of simple syrup and a healthy dose of fresh lime juice and crushed ice and you have yourself the simplest and most refreshing of daiquiris. A dash of bitters and a sugar cube? A Rum Old Fashioned you and your guests won't forget. The complexity of the spirit does all of the hard work for you. It's a well balanced and rich tapestry of flavor, all you have to do is highlight it.
